Banana Nut Chia Bars

Banana Nut Chia Bars

(gluten free, paleo, grain free)

Ingredients:

  • 1 cup almond flour
  • 1.5 cups vanilla egg protein powder (you could use whey, pea, whatever)
  • 4 tbsp. chia seeds
  • 1/2 cup unsweetened coconut shavings
  • 1/2 tsp baking powder and baking soda
  • 1 large mashed banana
  • 1/4 cup nut butter (I used this cashew)
  • 2 whole eggs
  • 1 egg white
  • 2 tbsp wildflower honey
  • 1/2 tsp. coconut extract

Instructions:

Preheat oven to 375*F

Mix all of the dry ingredients into a bowl.

Do the same for the wet and then combine.

Pour super thick batter into a 9×13 greased baking dish and sprinkle some more shredded coconut on top if you’re frisky ;)

Bake for 15 minutes or until toothpick comes out clean

Turn off the oven and let it stay sitting in there baking for about 7 more minutes or until brownish on top (this was just my personal preference)

Cut into 12 bars and enjoy!

They have a flavor of mostly banana and coconut, with a hint of nuttiness from the almond flour and a consistency identical to cake– REALLY addictive. Your tastebuds will thank you!
