(paleo, grain free, gluten free)
- 2 whole eggs
- 2 egg whites
- 3/4 cup pumpkin
1. Plop all ingredients in a bowl and whisk REALLY well until it’s smooth.
Then you have 2 options…
Either you can just cook like a regular omelette in a skillet, or if you suck at flipping like me, invest in a microwaveable omelette maker!!!
I adore this little thing– found it at Target! SO convenient and you can brag to your friends about your awesome omelette skills and they’ll never know BEST INVENTION EVER.
But I digress.
If you’re taking the omelette thingy route:
2. Pour half of the mixture in each side and microwave for 2 minutes or until it gets slightly cooked.
3. Close the container and cook for 2:45 or until it’s puffy and not runny.
4. Serve it up and top it!! I opted for broccoli and a hefty slathering of nut butter.
The texture was like cake and it gave me energy to get through the afternoon! You could probably add stevia or sugar if you wanted it sweet, but I liked the plain flavor– the nut butter took it to a whole new level though!
