Peanut Pumpkin Protein
Ingredients: (adapted from this recipe)
- 4 scoops vanilla whey protein
- 3/4 cup peanut flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tbsp chia seeds
- 1/2 cup greek yogurt (could sub cottage cheese)
- 1 15 oz can of pumpkin
- 4 egg whites
- 2 tsp vanilla
- 1 tsp cinnamon, nutmeg, ginger (optional)
Preheat oven to 350 degrees F
Mix all dry ingredients in a bowl and stir in wet ingredients.
Pour into a 9×13 baking dish sprayed with nonstick cooking spray.
Bake for 25-30 minutes or until it passes the toothpick test.
Let cool. Yields 12 bars.
They’re super moist, pumpkinny, peanutty, and really easy to make. Feel free to use whatever protein powder flavor you like, nuts, spices etc. They taste great crumbled in Greek yogurt, too!
